Ingredients for 2 glasses

1 heaped teaspoon of Chill Tea Atelier organic Matcha

200 ml water at 80°C

2 ripe apricots (or white peaches, depending on the season)

1 handful of fresh raspberries

250 ml natural sparkling water (or light kombucha)

Ice cubes

A few leaves of lemon basil or fresh mint

Optional: 1 tsp organic agave or maple syrup
Preparation
1. Prepare your matcha
In a bowl, sift the matcha powder. Add the hot water (not boiling!), then whisk vigorously with a chasen or an electric frother until you get a nice green foam. Let it cool.
2. Blend the fruits
Cut the apricots (or peaches) and blend them with the raspberries and a dash of syrup, for a smooth and slightly sweet puree.
3. Assemble the Garden Fizz
In large transparent glasses, place a spoonful of fruit puree. Add ice cubes, pour in the sparkling water, then delicately add the frothy matcha on top.
4. Finalize like a chef
Decorate with a few fresh raspberries, a sprig of basil or mint, and citrus zest if you like.
