Why your tea doesn't always taste the same (and what nobody tells you)

Temperature, water, brewing time: the real keys to a perfect tea

If you've ever thought: "But it's the same tea... why does it taste different today?" you're not alone.

This is one of the questions we get asked most often at Chill Tea Atelier.

And the answer is often surprising: the tea is never the problem.

The myth of "good tea"

We often think that a good tea depends solely on:

  • its origin,

  • its quality,

  • or its price.

In reality, even the best tea in the world can become bitter, bland, or unbalanced if three essential parameters are not respected:

👉 the water,

👉 the temperature,

👉 the brewing time.

And yet, these are precisely the elements that we neglect the most.

1. Water: the invisible ingredient that changes everything

Tea is 98% water.

In other words: if your water is bad, your tea will be too.

What we often forget

  • Overly hard water mutes the aromas

  • Overly mineralized water makes the tea flat

  • Chlorinated water gives a metallic taste

👉 Ideally, use filtered or lightly mineralized water.

💡 Chill Tip:

If your tea seems "dull", try it once with filtered water. The difference is often immediate.

2. Temperature: the #1 mistake tea lovers make

Boiling water for all teas is the most common mistake.

Why is this a problem?

Each type of tea releases its aromas at a specific temperature.

Too hot → bitterness

Not hot enough → bland flavor

Simple guidelines to remember

  • Green tea: 70–80 °C

  • White tea: 70–75 °C

  • Black tea: 90–95 °C

  • Infusions: 95–100 °C

👉 Burnt green tea loses all its delicacy.

👉 Black tea that's too lukewarm won't reveal its full flavor.

3. Brewing time: when too much becomes the enemy of good

Letting it steep "a little longer for more flavor" is a counterproductive reflex.

Why?

Because tannins (responsible for bitterness) are released after the aromas.

Golden rule

  • Green tea: 2–3 min

  • White tea: 3–4 min

  • Black tea: 3–5 min

⏱️ Set a timer at the beginning.

Your palate will thank you.

Tea as an experience, not an automatic habit

Drinking tea is not just consuming a hot beverage.

It's a sensory experience.

When you adjust the water, temperature, and time:
